Matcha is produced through a series of carefully controlled steps. Before harvesting, the tea plants are shaded. The leaves are then picked, briefly steamed, dried, sorted and finely ground. Shading has a particular influence on the finished tea, encouraging its vibrant green colour and contributing to a smoother, more balanced flavour profile.

Steaming and gentle processing help preserve the fresh colour of the leaves. The final grinding stage creates the exceptionally fine texture that is characteristic of matcha powder.
